20091210-Targine pepperoni chicken v1.0

Working on Recipe's for food photography, here is my first.

-special Equipment needed-
tagine & Time

-Required
Celery 3 stalks
Onions 1.5 to two big white onions
garlic
Powder to taste
coarse sea salt, to taste
green peppercorns, to taste
Pepperoni
1 Whole Chicken cleaned skin on
1 Cup of Chicken broth
Turn on Oven 250f
-Chop Celery and onions place on bottom of Tagine with chicken broth
Season Chicken with salt pepper and Garlic all over, place in Tagine. Layer the Pepperoni on top of chicken place Tagine lid on and let roast for about 3-5 hours depending on size of chicken . Don’t check too often to preserve liquid. Thanks to the Tagine lid, steam changes into liquid which drips down on the food during cooking; tastes and consistency develop and the food takes care of itself.
